Ecuadorian Bean Stew

Ecuadorian Bean Stew, aka Menestra de Frejol, is a traditional bean stew dish featuring beans simmered in a flavorful broth. Serve with rice and avocado for a healthy and delicious meal!

Soak Beans & Sauté Veggies

If using dried beans, soak beans overnight. In a pot, put oil on medium-high heat. Add diced onion and green pepper. 

Add Spices, Beans & Broth

Add minced garlic, cumin, oregano, smoked paprika and soaked beans. Next, add broth.

Simmer

Bring to a simmer and cover the pot with a lid. Keep an eye on them and test their tenderness. Once the beans are tender, take off the heat.

Serve

Serve these beans with a scoop of rice, pickled onions, avocado, and patacones, along with a garnish of fresh cilantro if desired. Enjoy!
